Chicken fried steak was my favorite meal when I was growing up. My family has always made it with just flour and not getting into the double dipping and fancy coating with spices but you can amp it up, if that's your style.
Ingredients:
- 1 lb Old Time grass-fed beef cube steaks
- 1/2 cup flour (more if needed)
- Butter & oil
- garlic powder
- pepper
- salt
Directions:
Cut cube steaks in half and coat with flour (use a bag or sealable container to shake).
Heat butter and a little oil over medium heat in a skillet (oil keeps the butter from burning - thank you Julia Child!)
Add floured cube steaks and sprinkle with salt, pepper and garlic powder.
When the liquid starts to show on top of the steaks, flip them and cook for a few more minutes.
Set aside and make the gravy.
Paula Deen's Milk Gravy (3 cups):
- 1-2 tbsp veg oil or bacon grease
- 4 tbsp flour
- 3 cups milk
- 1 tsp black pepper
- 1/2 tsp salt
Directions:
Heat fat over medium heat in the skillet you just cooked the chicken fried steak in.
Whisk in flour, whisking constantly for about 1 minute.
Slowly add milk, whisking constantly.
Stir in pepper and salt and continue cooking.
Whisk constantly for about 10 minutes, or until thickened.
