Quick & easy skillet meal using early summer season ingredients.
Ingredients:
1 lb lean ground beef
2 tablespoons olive oil
1 pint cherry tomatoes cut in half
1 small sweet onion chopped
3-4 large leaves and stems of Swiss chard rough chopped (or 8 oz baby spinach)
3 cloves garlic
1/2 teaspoon dried oregano
1/2 teaspoon salt
2 cups cooked rice
3 oz crumbled feta
Brown ground beef in large skillet over medium heat.
Add olive oil, cherry tomatoes, onion, Swiss chard, garlic, oregano and salt
Saute 4-5 minutes until onions & Swiss chard are soft.
Add cooked rice and saute until warm.
Dish into bowls and sprinkle with feta.
