Hearty, quick & simple to make - Broccoli Cheddar soup is a regular on our menu!
Ingredients:
1/4 cup butter
1 cup sweet onion diced
1 teaspoon minced garlic
1/2 cup all purpose flour
2 cups whole milk
2 cups half & half
1 teaspoon pepper
2 teaspoons salt
1/8 teaspoon cayenne pepper
2 - 12 oz packagesof broccoli florets
4 cups chicken, turkey, vegetable, beef, or ham broth/stock
2 cups cheddar cheese (sharp or mild)
Directions:
Place butter, onion, and garlic in a large pot over medium-low heat.
Cook until onions are translucent, about 5 minutes.
Whisk in flour and cook another 2 minutes.
Whisk in milk, half and half, salt, pepper, and cayenne pepper until smooth.
Stir in broccoli and broth and bring to a simmer and cook for 30 minutes.
Stir in cheese and serve.
